Eat well when time is tight

Simple ways to shop, prep, and cook with less stress — shortcuts, 10-minute prep, and meals that cook once and feed you twice.

Eating at home does not have to mean cooking everything from scratch. The goal is to make healthy meals easier by using simple shortcuts, keeping basic foods on hand, and cooking once so you can eat more than once.

  1. Before you shop: make a simple plan

    You do not need a full meal plan. Start with 2 or 3 easy meals you can repeat. Pick one from each group:

    • A quick base: brown rice, oats, whole-wheat pasta, potatoes, tortillas, quinoa, frozen grain mix
    • A protein: beans, lentils, eggs, tofu, tuna, chicken, yogurt, peanut butter
    • A fruit or vegetable: frozen vegetables, canned vegetables, bagged salad, apples, bananas, berries, canned fruit in juice
    • A flavor helper: salsa, mustard, hot sauce, low-sodium broth, pasta sauce, vinegar, garlic, herbs, seasoning blend

  2. At the store: choose easy foods

    Healthy food can be fresh, frozen, canned, bagged, or microwave-ready. Time-saving choices:

    • Frozen: vegetables, fruit, brown rice, edamame, stir-fry blends
    • Canned: beans, lentils, tomatoes, tuna, salmon, low-sodium soups
    • Bagged: salad kits, shredded cabbage, baby carrots, spinach
    • Microwave-ready: rice, quinoa, potatoes, oatmeal, frozen vegetables

  3. When you get home: do a 10-minute prep

    You do not have to prep everything. Just make the next meal easier. Choose 1 or 2:

    • Wash fruit
    • Put snacks where you can see them
    • Drain and rinse canned beans
    • Cut one vegetable
    • Cook one grain
    • Move older foods to the front
    • Put frozen vegetables where they are easy to grab

    Small prep counts. Even 10 minutes can make cooking later feel easier.

  4. Cook once, eat more than once

    When you cook, make a little extra. Cook extra:

    • Rice or pasta
    • Beans or lentils
    • Roasted or microwaved vegetables
    • Soup or chili
    • Baked potatoes or sweet potatoes

    Use leftovers in a new way:

    • Rice + beans + salsa = burrito bowl
    • Pasta + vegetables + beans = quick pasta meal
    • Potato + broccoli + beans = loaded potato
    • Soup + side salad = easy lunch
    • Tortilla + leftovers = wrap or quesadilla

  5. Keep 3 “no-recipe” meals ready

    Use these when you are tired, busy, or low on groceries.

    • Quick bowl: grain + protein + vegetable + sauce. Example: brown rice + black beans + frozen corn + salsa.
    • Quick soup: low- or no-sodium vegetable broth + canned tomatoes + beans + frozen vegetables. Add pasta, rice, or potatoes if you want it heartier.
    • Quick plate: protein + vegetable + starch. Example: egg whites or beans + spinach + toast or potato.

    Choose one action:

    • Make a short grocery list before shopping
    • Buy one frozen vegetable
    • Prep one fruit or vegetable after shopping
    • Cook extra rice, beans, or potatoes
    • Pick one easy meal to repeat this week

    You do not need a perfect plan. You just need one step that makes the next meal easier.
